Baked Fish Icelandic Style

Seljalandsfoss Porsmerkurvegur Iceland

1 T. butter
2 ½ lbs. cod fillets
1 tsp. lemon juice
Salt, pepper
¾ lb. Havarti tilsiter cheese, grated
1 T. mustard
1 c. heavy cream
½ c. panko breadcrumbs, toasted

Preheat oven to 350 degrees F. Toast panko crumbs in a shallow pan until golden brown.  Butter baking pan and arrange cod fillets in bottom.  Season with salt, pepper and lemon juice.  Cover the fish with the cheese.  Mix the mustard and the heavy cream and pour over the top.  Cover with breadcrumbs.  Bake for 35 minutes. (Serves 10).
